As you might expect when such a stunning and prestigious event like the Taste Cheshire Food and Drink Festival is on we have to attend.

One of the UKs most anticipated events has been in lock down since the very beginning of lock down. Normally held over the Easter weekend its been moved to the 28th-30th August for this year, plus the whole event will be held outside on the racecourse for the very time just to ensure that all current regulations are met. This will give us a lot of extra space and free flowin fresh air to ensure that the whole event is as safe as possible.

We will have a stunning array of our truly Exotic meat Biltong along with our current Beef range that's crafted from only the finest cuts of Sirloin from trusted British Suppliers. By using such exquisite cuts of meat rather than cuts of Topside gives our Beef Biltong a really distinctive texture combine that with all our range been tumbled in Red Wine Vinegar its also adds that extra luxury and class to every pack.

Out and About With Cheshire Biltong

Its taken us a little while longer than we really wanted to but we are delighted to let you all know that The Cheshire Biltong Company is now out and about all across the UK introducing Exotic Meat and Premium Cuts of Beef Biltong to you all.

Our First stop off was the "Yorkshire Dales Food and Drink Festival" situated just on the outskirts of the Yorkshire Dales its an idyllic place to introduce lovers of Biltong to something a bit special. We were delighted with the reception that we got with our unique meats and Premium Sirloin Beef Biltong, with people wanting to know about what we do and how we do it, its really was a wonderful weekend, even the weather was kind to us.

Then it was off to Winchester introducing even more people to something that's truly very special in the world of Biltong. Our classic Sirloin Range was a ranging success with everyone able to really tell the difference in taste and flavour from using only premium cuts of Beef along with been tumbled in not Malt Vinegar but fabulous Red Wine Vinegar adding that extra special twist of flavour to each slice.

Its off next to the Chester Food festival  at the Bank Holiday Weekend at the end of August. This is our most local event in our current Calendar and will be held over the three days from 28th-30th August and organised by our very good friends at Taste Cheshire. Normally a the majority of this event is held under cover but due to current Covid situation it will all be held out doors this year. Based at Chester race course its a truly stunning venue with plenty to see and do including the option to camp over as well. It really is one of Cheshire's Biggest and brightest Food events.

Beef Biltong made using only British Sirloin Steaks.

Here at The Cheshire Biltong Company we have built our outstanding reputation on delivering not just exceptional Biltong from a range of exotic meats but our original beef Biltong as well. Due to the fact its crafted from the finest cuts of Sirloin that you can find.

Normally Beef Biltong is made using cuts of Silverside or Topside these do make some amazing Biltong and its the cut that is traditional used across the globe due to its available, cost, fat content and skill required to prepare.  It was decided at a very early stage also that by using only Red Wine Vinegar across our range would also allow us to create a range of Biltong to level of sophistication like no other.  

Beef Biltong / Exotic Meat / Game Biltong

What we decided to do to take our Beef Biltong to the next level of enjoyment by using only cuts of Sirloin Steak. Not normally a cut of Beef associated with make Biltong due to its High cost, availability and skill required to prepare . But by using these exceptional cuts of beef it allows our Biltong to have that extra level of quality, its contains the perfect level of fat add to the the melt in the mouth experience that you would expect to find in any established Steak House from such a cut. Prepared using Red Wine Vinegar, its a combination as you may expect that goes hand in hand when it comes to complimenting each others flavours and texture.

From this we have also added two different varieties of our Beef Biltong Range that are a perfect match for an out standing cut like Sirloin. We have crafted up a truly stunning Chilli variety that contains a subtle level of heat that's the perfect match for such a quality cut. Our chilli's are added to our spice mix and are allowed to tumble for over 30mins to ensure that the flavour has been truly absorbed in the tenderised steaks. Once hung and dried in the perfect conditions its cut by hand to the perfect thickness to make it a truly exclusive Biltong experience like no other.

Then we have also added another amazing blend of Cracked Black Pepper Corn Biltong to our beef Collection as well. Just like the rest of our beef range its tumbled in the perfect blend of herbs, spices and and Red Wine Vinegar then we have added just the perfect measure of Cracked Black Pepper corn and as you would expect its a flawless partnership of flavours.

All our Beef varieties are created using only 100% British Beef from trusted local sources with full and complete traceability. All from less than 10miles from our production operation based in the heart of Cheshire.

A real taste of Exotic Biltong.

As an award-winning food producer from Cheshire we are delighted to of unveiled a brand-new product range – handcrafted from premium and exotic meats. Sheryl and Ryan Walker have been making and selling biltong – a form of South African dried, cured meat – for nearly five years.

Having won ‘Best Small Food Producer’ at the 2019 Taste Cheshire Awards, The Weston Biltong Company saw demand soar after its biltong was featured on the Emmy award-winning fantasy drama Game of Thrones.

“Global visibility in the ‘Seven Kingdoms’ was exciting!” said Sheryl, 46, whose parents moved to South Africa more than a decade ago.

“To build on our success, we are now unveiling The Cheshire Biltong Company. Our vision with this new venture is to create a line of luxury biltong snacks that are as welcome in high-end bars as they are in the finest picnic hampers. From beef sirloin and ostrich to kangaroo and venison, we look forward to bringing new, exotic tastes to market.”

Working out of a central hub at Radway Green Business Park in Crewe, where all packing and distribution takes place, the couple’s business had humble beginnings in their family kitchen.

“I fell in love with biltong when we went out to visit Sheryl’s parents in 2008,” said Ryan. “I tried supermarket varieties back home but, to me, nothing tasted as good. My mother-in-law sent me a biltong dryer with a note that said: ‘Make your own then!’ We rose to the challenge and, with time, we had ten dryers going in the kitchen and a viable business on our hands. Everything we have done since has very much been a logical progression. Having originally set out to make 50kg of biltong a week, we now process around six tonnes a month!”

From winning the 2018 Dabbers’ Den competition – co-hosted by Cheshire East Council, NatWest, Howard Worth Chartered Accountants and Poole Alcock Solicitors – to being finalists at the South Cheshire Chamber Business Awards the following year, Sheryl and Ryan say they are proud to have consistently made a mark on the county.

“Weston has been our home for more than 25 years,” added Sheryl. “Our teenaged children Jake and Charlotte are Cheshire born and bred, and we recruit all of our employees, affiliates and freelancers from within the county.

“Our venison for The Cheshire Biltong Company comes from Tatton Park and is butchered for us by Chestnut Meats in Nantwich. We are continuing to explore opportunities to source our other premium and exotic meat products as locally as possible, as well as inviting enquiries from potential stockists from within Cheshire’s ‘Golden Triangle’ and beyond. Looking to the future, we may also look to develop a range of beers and wines to pair with our luxury biltong.”

The Origins of "The Cheshire Biltong Company"

Based in the heart of Cheshire we are a husband and wife team who specialise in making Biltong from locally sourced British & Irish Beef. Our parent company, The Weston Biltong Company was formed in 2016 and has grown dramatically over the past five years, going from producing 30kg a week to now processing  tonnes of biltong per month. The Weston Biltong company uses all Silverside cuts of meat and is renowned for it’s range of flavours and bulkier bag sizes to meet the needs of those using Biltong as part of a high protein diet.

As a progressive award winning British Business it was a logical progression for us to move into using different cuts and types of meat to make Biltong. It was from this seed of thought that The Cheshire Biltong Company was born, allowing us to use our knowledge of making Biltong to appeal to a much wider audience.

The Cheshire Biltong Company specialises in Biltong made from meats such as Ostrich, Venison & Kangaroo, as well as British Sirloin Steaks, with many more species currently under testing.

Our Venison originates from the Historic Estate of Tatton Park in Cheshire and includes both Red & Fallow Wild Deer. The Ostrich used is sourced from one of the oldest suppliers of Exotic meat Founded in 1994 it was one of the first Ostrich farms in the UK and now holds around 27 breeding Ostriches. The Kangaroo is also sourced through the same company although this is imported directly from Australia.

Our Sirloin steaks are all sourced through Market Drayton Auction Market and are slaughtered less than three miles away in Haslington. These are then Butchered by local Butchers Graham & Mark Stubbs of Meat Direct.

As Cheshire residents for over a quarter of a century we are proud to be members of the South Cheshire Chamber of Commerce as well as collaborating with other local Cheshire Businesses for both professional support and product sourcing. As well as employing an all Cheshire local team.

We are the proud winners of the Nantwich Business initiative Dabbers Den (2018), as well as the Taste Cheshire Small Food Producer Award 2019 and are looking forward to building on the success of The Weston Biltong Company through further awards for The Cheshire Biltong Company.
